ZUCCHINI QUICHE 
2 c. sliced thin zucchini
1 c. onions, sliced
3 tbsp. olive oil
1 clove garlic, minced
1/2 tsp. salt
4 beaten eggs
1 c. milk
1 c. heavy cream
1/2 c. Mozzarella cheese grated
1 pie crust

Saute zucchini, onion, and garlic in olive oil. Season with salt. Cover bottom of unbaked pie crust. Combine remaining ingredients and pour into crust. Bake at 375 degrees for 30 to 35 minutes.
