SPINACH AND ARTICHOKE CASSEROLE | |
3 (10 oz.) boxes chopped spinach 4-5 jars marinated artichokes, cut up 4 tbsp. butter 4 tbsp. flour 2 c. half and half 1 1/4 c. Parmesan Salt and pepper to taste Butter 9x13 casserole dish, then line with drained artichokes, cut up. Melt 4 tablespoons butter. Add 4 tablespoons flour. Stir until melts then slowly add 2 cups half and half, stirring constantly. Add cooked spinach to half and half mixture. Add 1 cup Parmesan and salt and pepper to taste. Pour over artichokes. Put 1/4 cup Parmesan on top. Bake 350 degrees, 30-45 minutes. |
