COUNTRY WILD DUCK WITH RICE 
2 wild ducks
1 c. butter
Salt and pepper
2 c. rice
4 c. water

Put ducks into a suitable pan and cover with water. Add some salt. Boil until the duck meat is tender. Add 1 cup butter, 2 cups of long grained rice and pepper. Bring to a quick boil, reduce heat and simmer for 20 minutes or until the rice is done. Adjust the salt and pepper, if desired.

Serves 4 to 6.
