PLAIN WAFFLES 
2 c. flour
4 tsp. baking powder
1/2 tsp. salt
1 tbsp. sugar
1 1/2 c. milk
4 to 8 tbsp. oil or melted butter
2 egg yolks
2 egg whites stiffly beaten

Stir dry ingredients with a whisk until well mixed (or sift). Add milk, oil, beaten yolks and stir until smooth. Fold in stiffly beaten whites. Bake in a prepared hot waffle iron.

LOW FAT VERSION:

Nonfat milk
Use 4 to 6 tbsp. oil
Substitute 2 egg whites for each yolk

Makes approximately 8 waffles.
