BROCCOLI PUFF | |
2 (10 oz.) pkgs. frozen chopped broccoli (may use spinach or corn as a substitute for the broccoli) 1 c. Bisquick baking mix 1 c. milk 2 eggs 1/2 tsp. salt 1 c. shredded cheddar cheese (about 4 oz.) Heat oven to 325 degrees. Butter a 5 1/2-cup souffle dish or a 1 1/2-quart casserole. Cook broccoli slightly and drain. Beat baking mix, milk, eggs and salt with a hand beater until smooth. Stir in the broccoli and cheese. Pour into the souffle dish. Bake until a knife inserted halfway between center and edge comes out clean, about 1 hour. Serve immediately. Makes 6 portions. |
