BANANA NUT PANCAKES 
Milk
Eggs
Cooking oil
2 c. pkg. pancake mix
3 bananas
Butter
1/4 c. finely chopped pecans
Maple syrup

Make pancake mix with milk, egg and oil as per package label. Add chopped nuts to batter. Slice bananas 1/8 inch thick.

Heat griddle or frying pan over medium heat and brush lightly with butter. For each pancake, arrange 4 or 5 bananas in 3 inch circle. Ladle 1/4 cup batter over banana. Cook until bubbles form on surface and bottom is golden brown. Turn and cook 1 1/2 to 2 minutes or until underside is browned. Serve with maple syrup and butter. makes 15-18 pancakes.
