BANANA PANCAKES 
1 c. all-purpose flour
1 tbsp. white sugar
2 tsp. baking powder
1/4 tsp. salt
1 egg, beaten
1 c. milk
2 tbsp. vegetable oil
2 ripe bananas, mashed

Combine dry ingredients. In a separate bowl, mix remaining ingredients. Stir flour mixture into banana mixture; batter will be slightly lumpy.

Heat a lightly oiled griddle or frying pan over medium-high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Cook until pancakes are golden brown on both sides.
