FRENCH MINT PIES 
1 c. butter
2 c. powdered sugar
4 eggs
4 (1 oz.) squares unsweetened chocolate, melted & cooled
1 tsp. peppermint extract
2 tsp. vanilla
1 c. whipping cream, whipped
2 c. vanilla wafers, crushed

Cream butter until fluffy, about 5 minutes. Add 1 cup of the sugar and beat until creamy. Add remaining cup of sugar; beat. Add eggs, 1 at a time, beating after each addition. Add the cooled chocolate and beat hard. Add extract of peppermint and beat hard; add vanilla and beat hard. Fold in whipped cream. Place some wafer crumbs in bottom of paper baking cups. Mound chocolate mixture into each cup and sprinkle more crumbs on top. Freeze until ready to serve.
