GLAZED SWEET POTATOES 
Sweet potatoes
4 oz. butter
3 tbsp. dark brown sugar
Coarse salt
Freshly ground pepper
1/2 c. brandy
Grated nutmeg

Preheat oven to 375 degrees. Peel and slice the sweet potatoes and arrange in layers in a buttered shallow dish. Sprinkle with sugar, nutmeg, salt and pepper. Dot with butter. Add the brandy plus a little water if necessary to prevent to potatoes from drying up. Cover with foil and bake for 20 minutes, then remove foil and cook until the potatoes are golden brown.
