CREAM OF CRAB SOUP 
3 tbsp. unsalted butter
1 med. onion, chopped
2 tbsp. flour
2 c. water
2 c. Half and Half
1 lb. crabmeat
2 tbsp. sherry
1/2 tsp. salt
1/4 tsp. pepper
Pinch - red pepper
1 tbsp. chopped parsley

1. In a large saucepan, melt the butter over medium heat.

2. Add the onion and saute until tender, about 10 minutes.

3. Add the flour and cook, stirring constantly, for about 1 minute.

4. Stir in the water and bring to a boil.

5. Add the Half and Half and bring to a simmer.

6. Add the crabmeat, sherry, salt and pepper.

7. Cook for 3 minutes longer.
