MEAT AND MUSHROOMS 
8 to 10 fresh mushrooms sliced
2 tbsp. oil
1 lb. beef, sliced thin
4 cloves garlic, minced
1/2 c. soy sauce
2 tbsp. red pepper
1/2 c. shredded carrots
1 med. onion, halved and sliced crosswise

Heat oil, stir fry meat and garlic until brown over medium heat (4 to 5 minutes). Add mushrooms, cook 2 minutes more. Add soy sauce and red pepper to taste. Cook 5 minutes uncovered, add carrots and onions. Cook until crisp tender. Serve over hot rice. Serves 4.
