BEER BATTER 
3/4 c. flour
1/2 c. flat beer, room temperature
Salt to taste
1 tsp. peanut, vegetable, or corn oil
1 egg, separated

Place the flour in a bowl and stir in the beer, salt, and oil. Stir to blend roughly. There should be a few small lumps. Cover the bowl with plastic wrap and let stand in a warm place about 3 hours. Stir in the egg yolk. When ready to cook beat the white until stiff and fold it in.

VARIATION: 3/4 cup flat beer and 1 tablespoons oil.
