CREAMY DIJON DRESSING 
1/2 c. plain, nonfat yogurt
1 1/2 tsp. Dijon mustard
2 tbsp. grated cucumber
1/2 sm. scallion, minced
2 tsp. fresh parsley or cilantro, chopped
Dash of fresh ground black pepper

Combine all ingredients, mixing well. Serve chilled over your favorite salad greens and vegetables. Makes about 1/2 cup.

Per 2 tablespoons, 19 calories, 1 mg. cholesterol, 0 dietary fiber, 0 fat, 47 mg. sodium.
