TABOULI (BULGUR WHEAT SALAD) 
1/2 c. fine cracked wheat (bulgur)
1/2 c. minced green onion
1 c. minced parsley
1/2 c. minced fresh mint
2 c. coarsely chopped peeled tomatoes
1/2 c. lemon juice
1/2 tsp. salt
1/4 tsp. pepper
1/2 c. olive oil

Soak wheat in cold water to cover for 10 minutes. Drain and squeeze as dry as possible in clean cloth. Place wheat in bowl and add onion, parsley, mint and tomatoes. Stir in lemon juice, salt and pepper. Let stand about 30 minutes. Stir in oil. Serve on Romaine leaves. (This is better if you make it the day before you serve it. Flavors are well blended.)
