YANKEE CORN BREAD 
1 c. sifted flour
1/4 c. sugar
4 tsp. baking powder
3/4 tsp. salt
1 c. yellow cornmeal
2 eggs
1 c. milk
1/4 c. soft butter

Sift dry stuff together in large bowl. In small bowl beat eggs with fork and add milk and butter. Add all at once to flour mixture. Stir with fork until flour is moist; do not over stir - should be lumpy. Pour in greased iron skillet and bake at 425 degrees until done. (I think the skillet gives it the "southern" touch!
