WEST VIRGINIA CORN BREAD 
1 c. sifted flour
4 tsp. baking powder
1/4 c. sugar
3/4 tsp. salt
1 c. yellow cornmeal
2 eggs
1 c. milk
1/4 c. soft shortening

Sift together flour, baking powder, sugar, salt. Add cornmeal. Add eggs, milk, shortening. Beat until smooth. Pour into greased pan. Bake at 425 degrees for 20-25 minutes. Much better if you use fresh ground meal.
