HAPPY DAY CAKE 
2 1/2 c. cake flour (or reg. flour minus 2 tbsp. per c.)
1 1/2 c. sugar
3 tsp. baking powder
1 tsp. salt
1/2 c. butter
1 c. milk
2 eggs
1 tsp. vanilla

Soften butter and stir in all dry ingredients. Add 3/4 cup milk and beat 2 minutes at medium speed. Add eggs, vanilla and the rest of the milk, beat 1 more minute. Pour into 2 greased and floured 9 inch pans, and bake 25-35 minutes at 350 degrees.

FOR THE FROSTING:

1 c. sugar
3 tbsp. water
2 egg whites
1/2 tsp. cream of tartar
Vanilla

Beat all ingredients except vanilla in a double boiler, with water boiling (NOT on burner). Add vanilla to taste.
