CREAM CHEESE CUPCAKES 
2 (8 oz.) cream cheese, softened
1 c. sugar
2 eggs
1 tsp. vanilla extract
Vanilla wafers, crushed
Cherry pie filling or your favorite topping

Beat cream cheese until light and fluffy. Gradually add sugar. Add eggs one at a time. Stir in vanilla. Place teaspoon vanilla wafer crumbs in each cup of a mini muffin tin. Spoon cream cheese mixture over crumbs. Fill until full. Bake at 350 degrees for 20 minutes. Leave in muffin pan. Cover and chill overnight. Top with topping before serving.
