CHEESE AND RICE CASSEROLE 
1/4 c. butter
1 c. chopped onion
4 c. cooked white rice
2 c. sour cream
2 c. cottage cheese
1 lg. bay leaf, crumbled
1/8 tsp. pepper
4 oz. green chiles, chopped
2 c. grated Cheddar cheese
Chopped parsley
1/2 tsp. salt

Preheat oven to 375 degrees. Lightly grease 12x8x2 inch 2 quart baking dish.

Cook rice and saute onion in butter. Stir together hot rice, sour cream, cottage cheese, chiles, bay leaf, salt, pepper and onion. Toss lightly to mix well.

Layer half the rice mixture in bottom of baking dish. Top with half of the cheese. Repeat. Bake uncovered, 25 minutes or until bubbly and hot. Sprinkle with parsley.
