POLYNESIAN TURKEY SALAD 
3 1/2 c. cubed turkey
2 stalks celery, thinly sliced
1 tsp. curry powder
1/4 tsp. salt
1 c. mayonnaise
15 1/2 oz. can pineapple chunks, drained
1 banana, sliced
1/2 c. salted cashews
1/2 c. flaked coconut, if desired
11 oz. can mandarin oranges, drained
Lettuce leaves

In large bowl, combine first 6 ingredients; toss lightly. Cover and chill at least 2 hours. Before serving, slice banana; add to turkey mixture with cashews. Serve in lettuce cups; garnish with coconut and oranges.

Serves 4-6.
