MICROWAVE FRUIT COBBLER
3/4 c. apricot nectar
2 tsp. cornstarch
1/8 tsp. cinnamon
2 pears
3/4 c. grapes
2 peaches
3/4 c. biscuit mix
3 tbsp. sugar
2 tbsp. milk
1/2 tsp. cinnamon

In a 1 1/2 quart microwave safe casserole, stir together apricot nectar, cornstarch, and cinnamon. Microwave uncovered on 100% power for 2 1/2 minutes or until bubbly. Stir every 30 seconds. Peel and core pears. Finely chop 1/4 cup of pear and slice the rest.

Stir remaining sliced fruits into the sauce. Microwave, covered, on high for 2-4 minutes or until fruit is tender and mixture is bubbly.

In a medium bowl, combine remaining ingredients (biscuit mix, sugar, milk, cinnamon). Top fruit mixture with biscuit mix, leaving some uncovered spots. Microwave on 100% until biscuit mix sets and a wooden pick inserted in center comes out clean.

Note: Biscuit topping can be baked at 425°F if you prefer a browned top; cook until batter is done (same test as above).

Since microwave ovens vary in power, you may need to adjust your cooking time.
