PECAN LOG 
3 c. sugar
1/2 c. white corn syrup
1/2 c. water
1 tsp. vanilla
2 egg whites
Pecans, approximately 1 qt. finely chopped

Cook sugar, water, and corn syrup until spins a thread. Pour half of mixture over beaten egg whites and mix. Cook remaining half until forms a hard ball when drops in cold water. Pour into egg whites and sugar and beat until holds a peak. Add vanilla, shape into logs and refrigerate.
