BARBECUED SPARERIBS - CHINESE
STYLE
 
2 racks of spareribs about 2 lbs. each, cracked not cut
3 cloves garlic, minced
1/2 c. hoisen sauce
1/2 c. ketchup
1/2 c. light soy sauce
1 tbsp. red food coloring (optional)
1/4 c. Chinese rice wine or sherry

Mix ingredients and spread over both sides of the ribs. Let stand about 2 hours at room temperature.

Preheat oven to 375 degrees. Cook for about 40 minutes on each side To cut baking time you can boil the ribs first for about 45 minutes; then proceed as above. Serves 4.
