CHINESE SWEET-SOUR SPARERIBS 
1 tbsp. fat or salad oil
1 minced clove garlic
1/4 tsp. ginger
1/4 tsp. pepper
3/4 c. white vinegar
3 lbs. spareribs, cut into serving pieces
1 tsp. salt
1 1/2 tbsp. sugar
2 tbsp. soy sauce

In hot fat in pressure cooker, brown ribs, a few at a time, until golden brown. Return all ribs to cooker; add rest of ingredients. Cook at 15 pounds pressure, 15 minutes, as manufacturer directs. Reduce pressure immediately. Simmer uncovered, several minutes, or until all ribs are well coated with sauce. Skim off fat. Remove ribs to heated platter. Thicken gravy slightly. Pour over ribs. 4-6 servings.
