“PEANUT BUTTER - IRISH POTATO CANDY” IS IN:

PEANUT BUTTER - IRISH POTATO
CANDY
 
2 (1 lb. ea.) boxes confectioners' sugar, sifted
1/2 cup hot mashed potatoes, drained
1 small jar crunchy peanut butter

Mix sifted sugar into potatoes a little at a time by hand. (Don't panic when potatoes liquefy as the first sugar is added. This is what it's supposed to do. Just keep adding sugar until it is of pastry consistency).

Sprinkle wax paper with additional confectioners' sugar. Take baseball-sized ball of mixture and roll out like pastry. Spread with peanut butter and roll like a jelly roll. Wrap rolls in plastic wrap; chill and slice.

Makes 2 rolls.

My Aunt Sarah made this when I was little. I would stand at the kitchen table, and watch her every move, so I would remember how to make it. I am now 75 years young, and never miss a Christmas making the candy. My Aunt was from Ireland, and she learned to make it there with her mother.

I remember my grandmother making this every year, & I always called it potato candy. I've talked about making it myself for years and was always told there was no way it had actual potatoes in it! I decided to do my own investigating and found this recipe! Very easy to follow and mine turned out great! My family was so excited that I learned how to make this! Definitely a keeper!!!

Im 36 yearsold and remember my great grandmother making this when I was little. always wanted it but no one remembered how to make it. Always one of my favorites. Thanks for the recipe. Now my wife and kids can enjoy what I enjoyed when I was growing up. (since none even know what this is)

My mom used to make this at Christmas and I am so happy to find this recipe. She passed away 6 years ago and unfortunatley she took some good recipes with her, she didn't write them down, they were all in her head.

Going to try this one this week. My grandmother made these every year when me and the boys were little as part of her Christmas cookie plates. I use a small boiled potato with jacket on, let cool and mash with fork and start adding powdered sugar.

Try substituting Nutella or use Nutella and peanut butter. If using both, spread each on half the sugar mixture. Depending on which end you roll from, you will have either a 1/2 & 1/2 mixture in each piece or 100% of each flavor, you decide.
