“PEANUT BUTTER - IRISH POTATO CANDY” IS IN:

PEANUT BUTTER - IRISH POTATO
CANDY
 
2 (1 lb. ea.) boxes confectioners' sugar, sifted
1/2 cup hot mashed potatoes, drained
1 small jar crunchy peanut butter

Mix sifted sugar into potatoes a little at a time by hand. (Don't panic when potatoes liquefy as the first sugar is added. This is what it's supposed to do. Just keep adding sugar until it is of pastry consistency).

Sprinkle wax paper with additional confectioners' sugar. Take baseball-sized ball of mixture and roll out like pastry. Spread with peanut butter and roll like a jelly roll. Wrap rolls in plastic wrap; chill and slice.

Makes 2 rolls.

Try substituting Nutella or use Nutella and peanut butter. If using both, spread each on half the sugar mixture. Depending on which end you roll from, you will have either a 1/2 & 1/2 mixture in each piece or 100% of each flavor, you decide.

Going to try this one this week. My grandmother made these every year when me and the boys were little as part of her Christmas cookie plates. She didn't give many gifts, but I remember riding along to deliver loads of these tempting plates every year. Thanks, and hope they're just as good as I remember!

I remember my grandmother making this every year, & I always called it potato candy. I've talked about making it myself for years and was always told there was no way it had actual potatoes in it! My Aunt Sarah made this when I was little. I would stand at the kitchen table, and watch her every move, so I would remember how to make it. I am now 75 years young, and never miss a Christmas making the candy. My Aunt was from Ireland, and she learned to make it there with her mother.

We used to have this every year. Some of the tricks I learned over the years is if you use a marble cutting board to roll it out on (and marble rolling pin) you can chill the board and roller prior to doing it and you wont have to add as much sugar during the rolling process. Also using candy coloring instead of food coloring (usually is a paste) will require adding so much extra sugar. You can also get a marbled look using the paste (I used leaf cookie cutters one year and made sandwiches with it instead of a roll and arranged them on a plate for presents).
