ZUCCHINI CASSEROLE 
8 to 10 lg. zucchini, sliced
1 sm. onion, sliced
Salt to taste
1/2 pt. sour cream
Garlic, salt & pepper to taste
1/4 lb. butter
1/2 lb. Mozzarella cheese, shredded
1/2 lb. Jack cheese, shredded
1/4 c. Parmesan cheese
Slices of Jack or Mozzarella cheese

Cook zucchini, onions and salt in water until very tender. Drain well and mash. Add sour cream, garlic, salt, pepper, butter, Mozzarella, Jack and Parmesan cheeses; mix well. Pour into large casserole, top with cheese slices and paprika (optional). Cook for 15 minutes or until cheese on top melts in 350 degree oven.
