BREAD AND BUTTER PICKLES | |
4 qts. med. cucumbers, 1/8-1/4 inch slices 1/3 c. salt 1 1/2 tsp. turmeric 2 tbsp. mustard seed 2 qts. crushed ice 1 1/2 c. white onion 2 cloves garlic 4 1/2 c. sugar 1 1/2 tsp. celery seed 3 c. white vinegar Mix cucumbers, onion, garlic, and salt in a large pan. Cover with ice and let stand for three hours or longer. Remove garlic and drain well. In a separate pan combine sugar, spices and vinegar, heat just to a boil, add the cucumbers and onions and continue to heat for 5 minutes. Pack loosely in sterile hot jars to within 1/2 inch of top. (Juice covers all). Adjust lids and continue to boil for 5 minutes. Makes 7 pints. |
