RAINBOW COMPOTE 
1/2 c. honey
2 tbsp. lemon juice
1 tsp. grated orange peel
4 oranges, peeled and sliced
2 c. cubed honeydew
1 1/2 c. halved strawberries
1 1/2 c. fresh blueberries

ADVANCED PREPARATION: Combine honey, lemon juice, and orange peel. Pour over oranges in bowl; refrigerate several hours or overnight. Chill remaining fruits.

BEFORE SERVING: Drain oranges, reserving liquid. Arrange oranges in bottom of compote. Layer honeydew, strawberries, and blueberries atop. Pour reserved liquid over all. Garnish with additional whole strawberries, if desired. Makes 10 servings.
