PIG PICKIN CAKE 
1 box butter cake mix
4 eggs
1 stick butter
1/2 c. Wesson oil
1 can mandarin oranges (don't drain juice)

Mix dry cake mix, eggs, butter (chop butter up with fork). Add oil and oranges. Mix with mixer until well blended. Bake at 325 degrees for 30 minutes in 3 pans or in extra large oblong. Let cool.

ICING:

1 sm. pkg. instant vanilla pudding (use dry)
1 sm. can crushed pineapple (don't drain)
1/2 c. confectioners sugar

Mix above together and let stand a few minutes; then add 1 (9 ounce) tub of Cool Whip and 1 cup of coconut. Mix thoroughly. Spread icing between layers and on top of cake. Keep refrigerated.
