PORK AND BACON LOAF 
1 lb. lean pork, minced
1/2 lb. back bacon, minced
8 oz. white bread crumbs
1 onion, finely chopped
8 tbsp. cider
1 tsp. mustard
1/2 tsp. mixed herbs
Salt and pepper
1 egg, beaten

Preheat oven to 350 degrees. Thoroughly mix pork, bacon and add dry ingredients in bowl. Add egg and cider to bind. Pour into floured board and form into rectangular shape. Bake, uncovered, on shelf in lower 1/2 of oven for 1 1/2 hours. Cool, store in refrigerator overnight and serve next day. Cold, sliced with fries or salad. Serves 6-8.
