CHEESECAKE AND CRUST 
Day ahead mix:

3/4 c. butter (soft)
1 1/4 c. flour
1/4 c. sugar
1 egg yolk

Shape into ball and wrap in waxed paper and refrigerate to chill.

Preheat oven to 400 degrees. Press 1/3 of dough into bottom of pan. Bake 8 minutes and cool.

Set oven to 475 degrees.

In a large bowl mix:

5 pkg. (8 oz.) cream cheese
5 eggs
3 egg yolks
1/4 c. milk
1 3/4 c. sugar
3 tbsp. flour

Beat approximately 5 minutes. Press rest of dough around side of pan and pour in cream cheese mixture. Bake at 475 degrees for 12 minutes. Turn oven to 300 degrees and bake for 35 minutes. Turn off oven, but leave cake in for 30 minutes. Remove and cool. (Refrigerate for at least 8 hours.)
