STIR FRIED SNOW PEAS WITH CELERY
AND SCALLIONS
 
1/2 lb. snow pea pods
3 stalks celery, cut into 2" x 1/4" strips
4 scallions cut into 2" pieces
3 tbsp. peanut or vegetable oil
1/2 tsp. salt
1/2 tsp. sugar

MASTER SAUCE:

1 tsp. cornstarch dissolved in 1/4 c. water
2 tbsp. light soy

Wash snow pea pods. Remove strings. Remove strings from celery stalks and cut into pieces. Cut scallions into 2" pieces. Make the Master Sauce. Heat 3 tablespoons of oil in a skillet or wok over a high flame. Add snow peas, celery, scallions, salt and pepper. Stir fry at a sizzle for 3 minutes. Add Master Sauce and stir fry 1 minute for sauce to simmer and thicken. Serve at once. This dish cannot be reheated, the vegetables will go limp. Serves 6.
