SHEPHERDS PIE (NANA'S VERSION)
1 lb. ground beef (I use 93% but use what you like)
1 small onion, diced
1 (10 oz.) can tomato soup
1 (15 oz.) can green beans, drained (or any other canned vegetable)
salt, pepper and garlic powder, to taste
leftover mashed potatoes (or freshly made)
shredded cheese, for sprinkling

Fry hamburger over medium heat, when about half way done add the diced onion and continue to cook until onion is transparent (if using higher fat content, drain as much as possible before adding onions).

Season with salt, pepper and garlic powder, to taste. Pour in the tomato soup right from the can (do not add water). Add in the green beans (or your choice vegetable) and stir until well blended. Pour into a 9x13-inch pan, it will look skimpy but plenty. Top with the mashed potatoes.

Note: I spray my pan with non-stick cooking spray for easier clean-up.

Bake at 350°F for 30 minutes or until potatoes are warmed through. Sprinkle cheese on top and bake an additional 10 to 15 minutes until cheese is melted and bubbly.

Serve with a salad. Enjoy!

Serves 4-6 depending on serving sizes.
