LIME BREAD | |
This is an unusual bread with a "nip" to it. 6 tbsp. unsalted butter, softened 1 c. sugar Grated rind of 2 lg. limes (1 1/2 tbsp.) 2 eggs 1 1/2 c. flour 1 1/2 tsp. baking powder 1/4 tsp. salt 2/3 c. Half and Half 2/3 c. chopped walnuts Cream butter and sugar. Add lime rind and eggs; beat well. Sift dry ingredients together. Add to butter mixture alternately with cream; begin and end with flour. Fold in nuts. Turn into greased 9 x 5 inch pan, or 2 small pans. Bake at 350 degrees for 45-55 minutes. Cool in pan on wire rack. Makes 1 loaf of 9 x 5 inches OR 2 small loaves. NOTE: For additional flavor, add juice of 1/2 lime. |
