KEY LIME PIE | |
1 1/2 c. graham cracker crumbs 1/4 c. sugar 1/4 c. finely chopped almonds 1/4 c. melted butter THE PIE FILLING: 6 egg yolks 1 (14 oz.) can sweetened condensed milk, about 1 1/4 c. 3/4 c. fresh lime juice 2 tsp. grated lime rind If you prefer you can use bottled Key Lime Juice instead of fresh lime juice. 1. Preheat oven to 375 degrees. 2. Combine the crumbs, sugar, almonds and butter in a bowl. Blend well. 3. Use the mixture to line the bottom and sides of a 10 inch pie plate. Bake 8 to 10 minutes. Remove the crust to a rack and let cool. 4. Reduce oven heat to 350 degrees. 5. Beat the yolks in a mixing bowl. Pour in the condensed milk, stirring constantly. Add the lime juice and rind. 6. Pour the mixture into the crumb crust. Place the pie in the oven and bake 15 minutes. Transfer to a rack and let cool. Top with sweetened whipped cream. Yields: 6-8 servings. |
