LIME CAKE PUDDING 
2 tbsp. butter
3/4 c. sugar
3 eggs, separated
1/4 c. flour
1/8 tsp. salt
1/3 c. lime juice
1 tbsp. grated lime rind
1 1/2 c. milk

Cream butter and sugar. Stir in slightly beaten egg yolks, flour, salt, lime juice, grated rind and milk. Fold in stiffly beaten egg whites.

Turn into a buttered and sugared 1 1/2 quart baking dish. Place in shallow pan of hot water. Serve hot or cold, plain or with Cool Whip on top. Bake at 350 degrees for about 45 minutes. Serves 4-6. Could use lemon.
