ZUCCHINI SQUARES 
8 c. peeled & diced zucchini
1 tsp. cinnamon
1 c. sugar
2/3 c. lemon juice

CRUST:

4 c. all-purpose flour
2 c. sugar
3 sticks of butter
1/2 tsp. salt

1. Cook and cool for approximately 20-25 minutes zucchini, cinnamon, sugar and lemon juice. Drain mixture.

2. Put 1/2 crust mixture in 10 x 13 inch pan. Bake crust for 10 minutes at 375 degrees and cool.

3. Put cooled zucchini mixture into cool crust.

4. Sprinkle remaining crust on top. Press down and sprinkle with 1 teaspoon of cinnamon. If desired sprinkle chopped nuts on top. Bake at 350 degrees approximately 35 minutes.
