1 c. butter 1 1/2 c. sugar 2 c. chopped dates 2 tbsp. milk 1 tsp. salt 2 beaten eggs 4 c. Rice Krispies 1 c. chopped nuts 2 tsp. vanilla 2 c. coconut In a heavy 3-quart saucepan melt butter over low heat; add sugar and dates and continue cooking until mixture boils, stirring frequently. Remove from heat. To avoid lumps, stir constantly while adding milk, salt and eggs. Return to heat and boil for 2 minutes, stirring frequently. Remove form heat and stir in vanilla, nuts and Rice Krispies. Mix well. chill 1 1/2 to 2 hours or until it can be shaped into balls. Roll in coconut and place on wax paper. Store in loosely covered container (Makes 6 dozen 1-inch balls.) |
