MICROWAVE SCALLOPED POTATOES | |
1 1/4 c. milk 5 med. potatoes 3 1/2 tbsp. flour 1 tsp. salt 4 tbsp. butter Paprika Scald milk in microwave in a 2 cup glass cup on high for 1 1/2 minutes. Put half of potatoes in 2 quart glass dish with straight sides. Mix flour and salt; sprinkle 1/2 of it over potatoes. Dot with 2 tablespoons butter. Put rest of potatoes in and sprinkle with remaining flour mixture. Put scalded milk over all. Dot with remaining butter. Sprinkle with paprika. Cover with lid or plastic wrap (vented at one corner). Microwave on high for 12 to 14 minutes. Rotate dish a quarter turn after 6 minutes. VARIATION: Layer thinly sliced ham between layers of potatoes. Sprinkle with 1/4 cup shredded cheese and onion. |
