MICROWAVE SCALLOP POTATOES 
3 tbsp. butter
2 tbsp. flour
2 c. milk
1 tsp. salt
1/4 tsp. pepper
2 tbsp. chopped onions
3 1/2-4 c. potatoes, sliced thin
1/2 c. grated cheddar cheese

Melt butter in 1-quart measuring cup. Microwave HIGH 30 seconds or until melted. Blend in flour, salt and pepper. Gradually stir in milk. Microwave on HIGH 4-8 minutes, stirring every 3 minutes.

Layer in greased 2-quart casserole dish potatoes and onion. Add white sauce; cover and microwave 17-19 minutes. Stir after 10 minutes. Hold t minutes after done cooking. If potatoes are still crunchy, cook for additional 5 minutes on high.

Before serving, sprinkle cheddar cheese on top; cover. Cheese will melt. Yield: 6 servings.

Since microwave ovens vary in power, you may need to adjust your cooking time.
