CHICKEN AND SQUASH CASSEROLE 
2 lb. yellow squash
1 med. onion, chopped
2 sticks butter
1 can creamy chicken mushroom soup
1 (8 oz.) pkg. sour cream
1 sm. pkg. cornbread stuffing mix
1 chicken, deboned
1 carrot, grated
1/4 tsp. garlic powder
Salt and pepper to taste

Saute onion in small amount of butter. Add soup, sour cream, squash, chicken, seasonings and carrots. Melt butter in mixing bowl. Add stuffing mix and blend. Layer stuffing and squash mixture reserving stuffing mixture to sprinkle on top. Bake at 350 degrees for 30 minutes.
