BUTTERMILK PIE 
1 1/2 c. sugar
3 eggs
3/4 c. buttermilk
2 tbsp. cornstarch
1 tbsp. lemon extract
1/2 stick butter (melted)
1 (9 inch) pie shell

Beat eggs with wire whisk. Mix cornstarch with sugar. Add eggs, buttermilk, lemon extract and butter. Mix. Pour in pie shell. Bake at 325 degrees for 35 to 40 minutes or until center of pie is firm.
