MICROWAVE BREAD PUDDING 
5 slices bread, cubed
2 1/2 c. milk
2 tbsp. butter
3 eggs, beaten
1/3 c. brown sugar
1/3 c. sugar
1/2 tsp. cinnamon
1/4 tsp. salt
1 tsp. vanilla
1/3 c. raisins

Put bread in 1 1/2 quart casserole. In a 4-cup glass measure, microwave milk and butter 2-3 minutes, until all butter is melted.

In a small bowl, beat eggs, add a small amount of hot milk, then stir egg mixture into milk. Add brown sugar, sugar, cinnamon, salt, vanilla, and raisins. Pour mixture over bread cubes and mix well. Boil 1 cup water in 3-quart casserole. Set the 1 1/2 quart bread pudding casserole in the water (this slows the cooking).

Microwave on high for 9-11 minutes, stirring twice. Serve warm with cream or Cool Whip. Serves 6-8.

Since microwave ovens vary in power, you may need to adjust your cooking time.
