HOLIDAY BREAD 
3 c. sifted flour
1 tsp. baking soda
1 tsp. salt
1 tsp. cinnamon
3 eggs, beaten
3 c. sugar
1 c. cooking oil
2 c. finely grated carrots
1 (9 oz.) can crushed pineapple, drained
2 tsp. vanilla
1 c. walnuts, chopped

Sift flour, soda, salt, and cinnamon together. Place eggs and sugar in mixer bowl. Beat at medium speed until mixed. Beat in oil, a small amount at a time.

Stir in flour mixture, carrots, pineapple, vanilla, and walnuts. Place batter in two greased loaf pans. Bake at 350 degrees for 60 minutes.
