SOUTHERN GREENS 
1 ham hock
3 lbs. greens
3 c. water
1 tsp. salt
1 tsp. red pepper
1/2 tsp. sugar

Add split ham hock to boiling water in a large pot. Add seasoning. Cook meat until tender, about 1 hour. Add greens and cover pot. Cook greens until done. Drain and chop. Serve with sliced onions, or pickles or as is.
