TURNIP GREENS WITH CORNMEAL
DUMPLINGS
 
6 lbs. fresh turnip greens
1/2 lb. salt pork
2 tsp. salt
1 hot pepper pod
6 c. water
4 tbsp. Southern meal

Wash greens several times. Cut leaves from stems and cut into small pieces. Saute salt pork in large frying skillet over medium heat until fat is well done.

Use large pot, to which add water, greens, salt, pepper pod and salt pork. cover pot and cook ingredients until content comes to a boil. Lower flame and continue to cook for 1 1/2 hours until tender. Cornmeal dumplings should be dropped into liquid from the greens.

To prepare dumplings: Add enough water to meal to make mixture stiff. Use hands to pat mixture into patties. Drop into liquid from greens. Bring to boil. Cover and cook for 10 minutes or until tender.
