AUNT ANNIE BELL'S WINTER TURNIP
GREENS
 
Gather these small green leaves and small juicy turnips from your garden and prepare. Leave the turnips and greens attached.

Wash thoroughly but do not drain and place on top of several strips of fat pork (not cured) in a large, heavy cooking pot. Allow the water to drain to the bottom. This may be adequate liquid but a little more water may need to be added during cooking.

Add salt sparingly as the meat may already be salted.

Cook, covered, over medium heat until done (about one hour). Serve with pork chops, butter beans, homemade pickles, and great corn bread.

Winter Turnip Greens: In September, plant your favorite turnip green seeds. Water thoroughly if the ground is very dry. In about a month or so, you will have fall turnip greens - the turnips will come in time. During the winter the leaves will be killed back but will regrow during any warm spells. When these leaves are 2-4 inches long and the turnips are approximately 1 inch big, Winter Turnip Greens!
