GRIT CASSEROLE 
1 1/2 c. grits
6 c. boiling water
1 lb. Velveeta cheese
1 tsp. salt
2 sticks butter
3 eggs

Cook grits, salt and water for about 5 minutes. Fold in butter and cheese (cut in thin pieces). Beat in eggs, fold in grits. Mix well and pour into large, buttered baking dish, oblong. Bake at 325 degrees for 40 minutes or unti brown.
