TOMATO RELISH 
40 red big tomatoes
15 onions
12 sweet peppers
18 strong hot peppers
5 c. sugar
5 c. vinegar
4 tbsp. salt
1 tbsp. black pepper
1 tsp. red pepper
Sm. box mustard
Sm. box ginger
1/2 tsp. cinnamon
1/2 tsp. cloves

Remove skins from tomatoes. Chop onions, peppers finely (or put through grinder). Combine all ingredients except cinnamon and cloves. and put into large canning pot. Bring to a boil and cook for 2 to 3 hours. Then add cinnamon and cloves. Finish cooking, until sauce is heavy, not watery. Put in jars and seal.
